Production Technique: Chardonnay grapes are hand-picked in the estate’s sunniest vineyards; half the cuvée is fermented in one to two year old barriques.
Characteristics.
Colour: Pale straw yellow coloured with a very fine and persistent perlage, proof of slow bottle refermentation on its lees.
Bouquet: The wine’s aromatic profile is complex and appealing with an intense and distinct aroma of ripe fruit, hints of citrus, white flowers and aromatic herbs.
Taste: In order not to dissipate the delicate mousse, it is suggested to pouring it into the glas in two separate moments: its fine, creamy perlage will thus caress the palate, highlighting a fine texture of flavours and silky notes.
Pairings: Ideal with shellfish and fish in general, appetizers, risottos, gratin first dishes and sauce-topped pies. Strongly flavoured dishes tend to overpower its delicacy.
